Heart-healthy Mac & Cheese w/mixed vegetables (I like Trader Joe's) from the DASH diet cookbook. Great recipe, I doubled it so we'd have leftovers...
BIRTHDAY DINNER! My husband made this delicious dinner tonight, Milk Street's Pasta with corn, tomato and basil (I could eat this every week) and a gorgeous Chocolate cream pie (lactose free milk and True Whip on top) So, so good!
Thai Butternut squash soup from Cooking Light fast meals.. It was super fast/easy, and very tasty. I subbed Bragg's Liquid Aminos for Fish Sauce to cut down the salt.
I'm somewhat obsessed with these "knife & fork" grilled cheese sandwiches.. This time on homemade Semolina bread, 1 oz Tallegio with a bit of shaved cheddar. Then honey, black pepper and one very light grind of salt - barely a whisper of salt - on top.
Easy-peasy tonight... Thawed out some of the extra pizza dough I had last week and put together a quick pie with mozzarella, prosciutto & figs from Truly, Madly, Pizza... Drizzle a little olive oil and balsamic and proceed straight to YUM.
Hubster cooked tonight - Apple Cider Pulled Pork over egg noodles with an apple/parsley relish (the noodles are homemade). Totally delicious! The recipe is from REAL SIMPLE. He made it simpler using the Instant Pot, pressure cooked the pork shoulder w/bone for 15 minutes and then let cook on low the rest of the afternoon. Amazing broth.
